CULTIVATION OF THE VINEYARD:
Double Guyot system on sloping hills, with mainly clay soil.
GRAPES PRODUCED PER VINE:

Soft pressing of the whole grapes, decanting the pomace and controlled temperature fermentation in thermally conditioned steel vats at 16 - 18 °C.
Charmat method long fermentation in autoclave with an aging period on yeasts of 3 months.
Fruity, citrus scent with a pleasant hint of bread crust.
Harmonious and persistent flavor, with a marked sapidity and balance.
Excellent pairing with appetizers and fish dishes.
