The grapes used to produce this wine, come from our best vineyards in Ostra in the province of Ancona.

CULTIVATION OF THE VINEYARD:
Low spurred cordon system on sloping hills, with mainly clay and limy soil of medium consistency.

HARVESTING AND VINIFICATION:
The harvest is done strictly by hand, with well-ripe and homogeneous bunches, previosly "prepared and selected".
The vinification of the grapes after destalking, occurs in Tonneau (small tank of wood of 500 liters) for about 25 days with daily punching.
From 15 to 20 months, always using the same Tonneau used for making wine.
The wine continues to refinement in the bottle for at least 6 months, before being put on the market.
Intense ruby red color.
Scent of red fruit, in particular ripe cherry, blackberry, bluberry, slightly dried plum, with notes of rosemary and cloves.
Exuberant palate in its softness and complexity, where elegant toasted notes and an authoritatively silky tannic structure blend.
A wine of great structure, well suited to long-aged cheeses and red meat main courses, stews, baked goose and game, like wild boar, roe deer and fallow deer.
Long aged, it is a meditation wine.
