The grapes used to produce this wine, come from our best vineyards in San Marcello in the province of Ancona.

CULTIVATION OF THE VINEYARDS:
Low spurred cordon system on sloping hills, with mainly clay and limy soil of medium consistency.
GRAPES PRODUCED per VINE:
2 - 2,5 Kg. (about)
The grape harvest in crates, is macerated in stainless steel vats for 12 days.
At the end of this period of carbonic maceration, the grapes are pressed and the must is continuing its natural fermentation for about 15 days.
After fermentation, the wine is bottled.
In this version there is no ageing.
The Novello wine expresses its best characteristics in the first year of life.
Medium-bodied wine, that goes well with the first light, and salami.

It is advisable to keep the bottle in a cool and ventilated place, protecting it from any source of heat and light.
